Homemade Beet Hummus
Servings: 12 (2 Tbs.)
1 can (15 oz.) garbanzo beans, drained
1/2 cup roasted beets, sliced
1 garlic clove, minced
2 Tbs. lemon juice
2 Tbs. tahini
1/8 tsp. salt
1/8 tsp. pepper
1/8-1/4 tsp. cumin (optional)
1 sliced beet, chopped (optional)
1. In a high powered blender (blendtec), pulse all ingredients 6 times.
2. Using the dip button, blend the hummus untill you have a creamy consistency.
3. Put the hummus in a small closed container. Top with chopped sliced beet.
4. Put the hummus in the refrigerator for one week.
