Pumpkin Nice Cream

I've been loving fall foods lately! I love sweet potatoes, squash, apples, and of course pumpkin! Every time I have pumpkin it puts me in a good mood. Which is why it's perfect for Monday! I also made a chocolate peanut butter drizzle. It's delicious! Hope you all had a great weekend and are ready for a great week ahead!


Pumpkin Nice Cream
Servings: 1

Ingredients:
Nice Cream:
1 1/2 frozen bananas 
1/8 cup pumpkin purée
splash of dairy-free milk or water
Chocolate peanut butter:
1 1/2 tsp. all natural peanut butter
1/8 tsp. cocoa or carob powder
1/8-1/4 tsp. truvia baking blend
1 tsp. water
Toppings:
6 almonds
1/2 banana, sliced
sprinkle of pumpkin pie spice 

Directions:
1. In a high powered blender, (blendteccombine all nice cream ingredients until desired consistency. Pour in a bowl.

2. In a small ramekin or bowl combine chocolate peanut butter ingredients. Set aside.

3. Place granola in the middle of the nice cream. Outline the granola with almonds and chocolate peanut butter. 

4. Place banana slices at the corners of your bowl and sprinkle with pumpkin pie spice.
