Taco Bean Salad

   It's no surprise that my family and I LOVE Mexican food! Almost every Monday is Mexican Monday at my house but, to be honest we could probably have Mexican food every night! This taco bean salad will be one of your favorites for Mexican night! It has the perfect amount of flavor! Not to spicy, yet so fresh and tasty! It's great in my cinco de mayo salad, tacos, burritos, enchiladas, and as a mexican mason jar salad as described below! Enjoy!







Taco Bean Salad
Servings:

Ingredients: 
1 15 oz. can swbeans organic black beans, rinsed and drained
1 15 oz. can corn, rinsed and drained
1/2 red pepper, chopped finely 
1/3 cup cilantro, chopped
1 Tbs. green onion, chopped
1 Tbs. lime juice
1/8 tsp. cayenne red pepper 
1 avocado, chopped 

Directions:
1. In a bowl stir all ingredients except avocado until combined. 

2. Gently, stir in avocado and put bowl in the fridge for 30 min. Serve and enjoy!

Mexican Mason Jar Salad
Servings: 1

Ingredients:
2 Tbs. salsa
1 1/2 cups romaine lettuce/spinach
1/2 cup taco bean salad...SO GOOD!
Homemade corn tortilla chips

Directions:
1. Layer the salad from bottom to top in a mason jar. Place the salsa, lettuce/spinach, and taco bean salad in order. Top with tortilla chips. Enjoy!
