Mediterranean Zoodles

Last summer I got a veggetti spiralizer at a kitchen outlet store that I fell in love with. The spiralizer is fun to use! I have made spiralized zucchini, cucumber, carrot, sweet potatoes, and I look forward to using beets and more zucchini from my summer garden. This zoodle dish is mediterranean with tomatoes, artichokes, olives, and hummus! I also had a side of some un-pictured chicken which you could also add. I have a feeling I will be using my spiralizer a lot this summer!

Mediterranean Zoodles
Servings: 1

1 medium zucchini 
2 canned artichokes 
4 olives 
4 grape tomatoes 
2 Tbs. creamy homemade hummus or store bought 

1. Using your spiralizer, spiral your zucchini and place on a plate. 

2. Top your zoodles with artichokes, olives, tomatoes, and hummus.
