Sweet Potato Zoodles

 These sweet potato zoodles are packed with flavor and sweetness! You can get so creative with zoodles and put on everything your heart desires! I used a bunch of leftovers to make these. I made them with a fall twist with a creamy butternut squash sauce! It's tasty, nourishing, and has pops of color!




Sweet Potato Zoodles
Servings: 1

Ingredients:
1 zucchini
1 carrot
1/2 carrot, sliced 
1/2 sweet potato, sliced
1/4 cup chickpeas, rinsed
1 Tbs. raisins  
1/4 tsp. nutmeg 

Directions:
1. Using your veggetti spiral make zoodles with zucchini and carrot. 

2. On a plate gather zoodles, sliced sweet potato, carrots, chickpeas, and raisins. 

3. In a small ramekin combine soup and nutmeg. In the microwave heat it up for 15 sec. Pour over zoodles and serve!
