Spinach Pasta Salad

As summer is coming to a close all we want to do is enjoy as much time outside and less time in the kitchen. Spinach pasta salad is an easy one dish meal that your family will love! This salad is full of complex carbs, iron, vitamins, potassium, protein, and is delicious! My family added rotisserie chicken for their protein but, you can add beans to make it vegan. Pasta salad is a great dinner to make when it's hot outside and you don't want to turn on the oven. Top this salad with your favorite dressing and you have one yummy summer meal!


Spinach Pasta Salad
Servings: 9

Ingredients:
1 (12 oz.) pkg. gluten free or whole wheat penne pasta
2 cups muchrooms 
1/2 cucumber 
1/2 red pepper
3 cups spinach
1/2 rotisserie chicken or 1 can beans, rinsed and drained 

Directions:
1. Cook pasta according to directions. Drain and rinse in cold water. 

2. Meanwhile, slice the mushrooms, cucumber, and red pepper. 

3. In a large bowl, combine pasta, mushrooms, cucumber, red pepper, spinach, and choice of protein.

4. Serve each serving with favorite dressing.
