Avocado Pesto Zoodles

This past week I made this delicious avocado pesto zoodles and let me just say it was amazing! I never made a pesto before and I was surprised how great it tasted. Not only is this dish delicious but, it is also easy. There is no cooking required. All you need is a Veggetti, a blender or food processor, and a sharp knife! My zoodles were creamy, packed with flavor, healthy fats, and a delicious garlic kick. If you haven't made a dish with zoodles before; I would definitely recommend this one!




Avocado Pesto Zoodles
Servings: 1-2 

Ingredients: 
Zoodles:
1 medium zucchini
Pesto:
1/2 avocado
1 tsp. lemon juice
1/8 cup fresh basil
1/2 cup water
1/2 garlic, minced
1 Tbs. sunflower seeds
 Topping:
1 avocado wedge, diced
1/2 tomato, diced
1 tsp. sunflower seeds
2 basil leaves as garnish


Directions:
1. With you veggetti spiralize your zucchini using the larger side. 

2. In a blender (blendtec) or food processor blend the pesto ingredients until creamy.

3. On a large plate mix the zoodles and pesto until combined. 

4. Top the zoodles with topping and serve.
