Chinese Snap Pea Quinoa

My favorite source of grain is quinoa. I think quinoa is the cutest little grain. Whenever we are have quinoa I say "yeah, we're having ringlets." That's what quinoa looks like to me, little ringlets! Quinoa is a nutrient packed grain. It's a great source of protein, fiber, magnesium, manganese, potassium, iron, phosphorus, folate, and copper to name a few. This quinoa dish is Chinese. With it's secret ingredient, liquid aminos all purpose seasoning. It's a natural soy sauce. Enjoy this homemade and healthy Chinese dish! 





Chinese Snap Pea Quinoa
Servings:


Ingredients: 
1 cup dry quinoa (I used organic tru roots quinoa) 
2 cups low sodium chicken broth or vegetable broth 
3 carrots, peeled 
1/2 onion 
2 Tbs. liquid aminos all purpose seasoning  
1/4 tsp. pepper 
1/4 tsp. garlic powder 
1/4 tsp. Mrs. Dash table blend salt free
1/4 cup water  
1 1/2 cups sugar snap peas 


Directions:
1. In a pot with a lid, cook quinoa and chicken broth to a boil. 
When quinoa comes to a boil turn heat to low and add lid. 

2. While the quinoa is cooking chop carrots and onion. 
Sauté or steam veggies in a separate pan until tender. 

3. When quinoa is done add the cooked veggies, liquid aminos, 
seasonings, and water until it all comes together. 

4. Add sugar snap peas and serve. 


Notes:  
Feel free to add more veggies if desired.
