Layered Salad

Layered salad is a perfect salad to bring to a potluck or a gathering. We had this salad for dinner and it is delicious. It's the dressing that makes it taste amazing!



Layered Salad 
Servings:  8

Ingredients:
Salad: 
1 head romaine lettuce 
5 oz. fresh spinach
3 large hard boiled eggs
1 bunch green onion
6 slices natural choice smoked deli ham, sliced in tiny pieces
1 cup frozen peas, cooked
1 cup sliced cucumber 
Dressing:
1 cup light sour cream or nonfat greek yogurt 
1 cup olive oil mayo 
1 1/4 tsp. truvia
Salt and pepper to taste
Garnish:
1/8 cup grated Parmesan cheese 
4 grape tomatoes 

Directions: 
1. Wash and tear lettuce and spinach into pieces. 

2. In a trifle bowl layer lettuce, spinach, eggs, green onion, ham, peas, and cucumber. 

3. Mix sour cream, mayo, truvia, salt, and pepper in a small bowl together. 

4. Cover the top of the salad with mayo mixture. 

5. Garnish the salad with parmesan cheese, tomatoes, and serve. 

Notes:
For a vegetarian option just omit ham
