Spring Egg Salad

Can you believe this weather? It has felt like spring the past couple of weeks in Colorado, in February! 
All of this spring like weather has inspired me to be creative in my salads. This spring salad is perfect for a spring brunch.

Spring Egg Salad
Servings: 1

1 1/2 cups baby spring mix
1 hard boiled egg
9 cooked asparagus spears
4 grape tomatoes, sliced
Balsamic vinaigrette dressing 

1. On a plate gather all ingredients and drizzle with a balsamic vinaigrette dressing.
