4 min. Pumpkin Breakfast Mug Cake

I have been going pumpkin crazy this fall! This morning with my breakfast I made a pumpkin cake in a mug. It was sooo good! This is a cake you can feel good about eating for breakfast or a snack. It's all natural, sweetened with agave nectar and stevia. On top of the cake is a greek yogurt icing.  

 












4 min. Pumpkin Breakfast Mug Cake
Servings: 1

Ingredients for cake:
1/4 cup pumpkin purée
1 flax egg
2 tbs. coconut flour (or any kind of flour)
2 tbs. water
2 tbs. unsweetened applesauce 
2 packets stevia (or 1 1/2  tsp. honey~I've tried both) 
1/4 tsp. vanilla extract
1/8 tsp. baking powder
1/2 tsp. pumpkin pie spice
Ingredients for icing:
3 tbs. coconut or greek yogurt
I/2 tsp. cinnamon
1 tsp. agave nectar or honey 


Directions:
For the cake:
1. Mix all ingredients in order in a mug. 
2. Put the mug in the microwave for 3-4 min. 
For the icing:
1. While the cake is microwaving mix the greek yogurt, cinnamon, and agave together. 
2. When the cake is finished, top it with the greek yogurt icing.
3. Sprinkle the cake with some cinnamon.
