Crockpot Pinto Beans



This is by far my favorite pinto beans! I love to have them just the way they are but, they are also good in: 
* salads
* chili
* soup
* tacos
* enchiladas 
* homemade bean burgers
* homemade refried beans
 Once you make these crockpot pinto beans you will stop buying the store bought cans. Plus it's cheaper! Not to mention full of potassium, protein, complex carbs, and these pinto beans from Costco have 14 grams of fiber! That's over half the recommended amount of fiber in a day! Below are the step by step photos to make these amazing beans! 













Crockpot Pinto Beans
Servings: Makes 8 cups

Ingredients:
4 cups (2 lb.) Solfresco dry pinto beans
10 cups water
1 large onion, chopped
2 tsp. cumin
1 tsp. pepper
1/8 tsp. salt

Directions:
1. Place all ingredients in the crockpot.

2. Stir everything together. Turn crockpot on high and cover for 6-8 hours. 

3. Drain beans or use leftover liquid to make refried beans.

4. Put beans in a large closed container in the fridge or in the freezer for 3 months.

Notes: 
For a Mexican flavor stir in 1 can diced green chilies when beans are cooked.
