This afternoon I did some food prep for the week. I made some delicious black bean burgers with the perfect amount of kick! I've been switching more to a vegan and vegetarian lifestyle for digestive reasons (intolerance) and have been finding new ways to still get in my protein. These burgers are spot on! They're perfect on a salad, as a lettuce wrap, and on a bun! You will love these burgers at your next bbq!
Spicy Black Bean Burgers
Servings: 5
Ingredients:
1 15 oz. can black beans, rinsed and drained (I used S&W organic black beans)
1/4 cup chopped cilantro
1/4 cup chopped red pepper
1 Tbs. lime juice
2 Tbs. chopped green chilies
3/4 tsp. cumin
1 garlic clove, minced
1/4 tsp. pepper
2 Tbs. flax
2 Tbs. water
Directions:
1. In a high powered blender (blendtec) or food processor, blend all ingredients until combined and slightly creamy.
2. Form each burger using a 1/4 cup.
3. Place each burger on a medium skillet or grill on high. Make sure to handle them carefully.* Flip each burger until cooked.
