Crustless Asparagus Goat Cheese Quiche

This quiche is perfect for dinner or breakfast. The quiche is absolutely delicious! It's packed with nutrients, healthy fats, and protein. This is perfect for a girls brunch.




Preheat oven to 375 degrees fahrenheit. Spray 9-inch glass pie plate with cooking spray. 




In a large skillet, cook asparagus and onion in olive oil for 5-8 min, stirring occasionally until asparagus is crisp and tender. Spoon vegetables into pie plate and top with crumbled goat cheese. 




In a large bowl, beat rice milk, salt, pepper, and eggs with whisk. Pour egg mixture over vegetables. 
Sprinkle parmesan cheese on top of quiche. 
  


Place pie plate on lowest oven rack. Bake for 35-45 min. until center comes out clean with an inserted knife.

Ingredients:
1 tbs. olive oil
1 1/2 cups fresh asparagus spears, cut into 1-inch pieces
1 medium onion, chopped 
1 cup rice dream original milk or half and half 
1/2 tsp. salt
1/2 tsp. pepper
3 large eggs
1/8 cup freshly grated parmesan cheese 

Directions:
